Ingredients

The ingredients are:
  • 125 grams butter (softened)
  • 1 cup all-purpose flour (plain)
  • 125 grams pecans (finely chopped, 1 cup, plus extra to serve)
  • 250 grams cream cheese (softened)
  • 1 cup icing sugar (mixture)
  • 300 mL thickened cream
  • 1 block (200 grams) dark chocolate (chopped)
  • 3 cups milk
  • 1 packet (100 grams) vanilla instant pudding mix
  • 180 grams white chocolate (chopped)
  • 300 mL thicken cream (whipped to serve)
  • Cocoa powder, to serve

How to Make

  • Step 1: Preheat oven to 180C or 160C fan forced.

  • Step 2: Grease a 6cm deep 17cm x 25cm base (8 cup capacity) baking dish.

  • Step 3: Using an electric mixer, beat butter for 5 minutes or until light and fluffy and then add flour and pecans and beat on low speed until just combines.

  • Step 4: Press mixture over the base or prepared pan and bake for 20 to 25 minutes or until edges are golden and top is just firm to touch and then cool completely.

  • Step 5: Using an electric mixer, beat cream cheese until smooth and then add icing sugar and beat until mixture is light and fluffy.

  • Step 6: Add cream and beat for 1 minute or until mixture is well combined and starts to thicken.

  • Step 7: Pour mixture over prepared base in dish and refrigerate for 1 hour or until just set.

  • Step 8: Meanwhile place the dark chocolate and 1/2 the milk in a saucepan over medium heat and cook, stirring occasionally for 5 minutes or until chocolate is melted and mixture is combined.

  • Step 9: Remove from heat and transfer to a bowl and refrigerate for 1 hour or until cold.

  • Step 10: Sprinkle 1/2 the pudding mix over the cold dark chocolate mixture.

  • Step 11: Using an electric mixer, beat for 1 minute.

  • Step 12: Carefully pour mixture over cheesecake layer in dish and refrigerate for 3 hours.

  • Step 13: Meanwhile place the white chocolate and remaining milk in a saucepan over medium heat and cook, stirring occasionally, for 5 minutes or until chocolate is melted and mixture is combined.

  • Step 14: Remove from the heat and transfer to a bowl and refrigerate while dark chocolate layer in dish is setting.

  • Step 15: Sprinkle remaining pudding mix over cold white chocolate mixture.

  • Step 16: Using an electric mixer over dark chocolate layer in dish and refrigerate overnight.

  • Step 17: Top dessert with whipped cream - you can pipe it or dollop and spread.

  • Step 18: Dust with cocoa powder and sprinkle with extra pecans.

  • Step 19: Serve and enjoy.
