Step 1: Place chicken breasts in a zippered plastic bag and pound out to equal thickness throughout. Put oil in a large skillet and preheat on medium-high heat. Season chicken breasts with salt, pepper and fiesta lime seasoning on both sides. Place in preheated skillet and brown on each side.
Step 2: While chicken is browning, put the corn syrup, lime zest, lime juice and rum flavoring (or rum) in a small bowl and whisk with a wire whisk till well mixed.
Step 3: Pour over browned chicken, cover and reduce heat to low. Keep an eye on it so it doesn't boil away. Cook 30 minutes. Remove lid about 5 minutes before done and increase heat to reduce down the sauce to thicken a little. Don't let it reduce down too much, or it will get hard like candy.
Step 4: Plate chicken and pour sauce over it.
