Step 1: Preheat oven to 200C or 180C fan forced.
Step 2: Combine the carbonara sauce and chicken in a bowl and stir in parsley.
Step 3: Spoon or pipe mixture into cannelloni tubes.
Step 4: Spoon 1/2 cup pasta sauce onto base of a 2 litre casserole dish and then place filled tubes into the dish and spoon remaining pasta sauce over and then cover with foil and cook for 30 to 35 minutes.
Step 5: Remove cannelloni from oven and remove foil and sprinkle over cheese and return to the oven for 10 to 15 minutes or until cheese is golden.
Step 6: Serve with mixed salad leaves and garlic bread if having.
