Ingredients

The ingredients are:
  • Carbonara sauce (700 grams fresh creamy carbonara sauce, Latina brand recommended)
  • 250 grams cooked chicken (2 cups hot roast chicken, very finely chopped)
  • 1/4 cup parsley, chopped
  • 200 grams dry cannelloni pasta (instant shells, Sam Remo brand recommended)
  • 500 grams pasta sauce (napoletana pasta sauce)
  • 3/4 cup mozzarella cheese, shredded
  • Garlic bread, to serve optional
  • Mixed salad leaves, to serve optional

How to Make

  • Step 1: Preheat oven to 200C or 180C fan forced.

  • Step 2: Combine the carbonara sauce and chicken in a bowl and stir in parsley.

  • Step 3: Spoon or pipe mixture into cannelloni tubes.

  • Step 4: Spoon 1/2 cup pasta sauce onto base of a 2 litre casserole dish and then place filled tubes into the dish and spoon remaining pasta sauce over and then cover with foil and cook for 30 to 35 minutes.

  • Step 5: Remove cannelloni from oven and remove foil and sprinkle over cheese and return to the oven for 10 to 15 minutes or until cheese is golden.

  • Step 6: Serve with mixed salad leaves and garlic bread if having.
