Ingredients

The ingredients are:
  • 250 grams butter
  • 175 grams caster sugar
  • 250 grams chocolate powder (drinking chocolate, dissolved in a little warm water)
  • 4 egg yolks
  • Milk (only a little if needed)
  • 125 grams self-rising flour
  • 50 grams rice, ground

How to Make

  • Step 1: Heat oven to moderate.

  • Step 2: Grease and flour a square baking tin, approx 17x7cm

  • Step 3: Beat butter and sugar together till white add the dissolved chocolate and the egg yolks, then the flour and rice.

  • Step 4: If mixture is too thick, add a little milk.

  • Step 5: Beat egg whites till stiff and then fold through carefully.

  • Step 6: Tip into the tin and bake in moderate oven for 40 minutes.

  • Step 7: Let the cake rest in the tin before turning out.

  • Step 8: Ice with your favourite icing.
