Step 1: Heat oven to moderate.
Step 2: Grease and flour a square baking tin, approx 17x7cm
Step 3: Beat butter and sugar together till white add the dissolved chocolate and the egg yolks, then the flour and rice.
Step 4: If mixture is too thick, add a little milk.
Step 5: Beat egg whites till stiff and then fold through carefully.
Step 6: Tip into the tin and bake in moderate oven for 40 minutes.
Step 7: Let the cake rest in the tin before turning out.
Step 8: Ice with your favourite icing.
