Ingredients

The ingredients are:
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • Fresh ginger (2cm piece, finely grated (give the ginger a good wash and leave the skin on)
  • 1 garlic clove, peeled and crushed
  • 2 teaspoons fish sauce (optional... see description above )
  • 2 pounds chicken drumsticks (8 legs)
  • 2 teaspoons sesame seeds (optional)

How to Make

  • Step 1: Mix together the soy sauce, honey, ginger, garlic and fish sauce in a large dish.

  • Step 2: Score the chicken drumsticks two or three times so that the marinade can get right in. Add the chicken to the marinade and turn to coat, then cover with plastic wrap and refrigerate for at least 2 hours and up to 24 hours (no longer), turning a several times during the time.

  • Step 3: Preheat oven to 200°C/180°C fan-forced.

  • Step 4: Line a baking tray with baking paper if cooking in the oven or crank up the Barbie to a medium heat if cooking on the Barbie.

  • Step 5: If cooking in the oven, remove chicken from marinade. Place, in a single layer, on prepared tray. Sprinkle with sesame seeds (optional). Bake for 35 minutes or until golden and cooked through.

  • Step 6: If BBQ'ing remove chicken from the marinade and cook over a medium heat to ensure that the chicken cooks through to the bone without burning on the outside.

  • Step 7: Although you may like a bit of char on BBQ and think its great flavour, so its up to you! If BBQ'ing – sprinkle the sesame seeds on at the end!
