Ingredients

The ingredients are:
  • 6 cups cauliflower, chopped
  • 4 cups vegetable broth
  • 4 ounces milk (1/2 cup)
  • 1 1/2 cups brown rice (cooked)
  • 1/2 cup green peas (frozen)
  • 1 tablespoon chives, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • FOR TOPPING
  • 1/2 cup mozzarella cheese, shredded
  • 1 teaspoon parley, chopped
  • 2 tablespoon Parmesan cheese, shredded

How to Make

  • Step 1: Bring the vegetable broth and water to a boil in a large pot. Add the cauliflower and boil for about 10 minutes, until tender.

  • Step 2: Transfer cauliflower pieces to a blender or food processor.

  • Step 3: Puree the cauliflower, vegetable broth to get a smooth, creamy consistency. Season with salt. Pour over the cooked rice and stir to combine.

  • Step 4: Meanwhile, in a large nonstick skillet, melt the butter and add the garlic,

  • Step 5: Sauteing over low heat until the garlic is very fragrant, about 3-5 minutes.

  • Step 6: Add the peas.

  • Step 7: Add the creamy rice mixture and stir until butter and garlic is incorporated.

  • Step 8: Add chives, cheeses and parsley; stir it throughout the rice to get it melted.

  • Step 9: Season with additional salt and pepper to taste.
