  • 1 tablespoon rice vinegar
  • 1/2 teaspoon orange zest, grated
  • 1 1/2 teaspoons olive oil
  • 1/2 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups escarole, torn
  • 2 cups lettuce (salad greens)
  • 1 pear (Asian apple pear, cored and sliced, see possible subs in description)
  • 8 ounces figs (8 figs, stemmed and quartered)
  • 1/4 cup blue cheese, crumbled (low-fat)
  • 2 tablespoons hazelnuts (toasted and chopped)

How to Make

  • Step 1: In a large salad bowl whisk dressing ingredients (shallot - pepper).
