Ingredients

The ingredients are:
  • 1/2 pound fresh mushrooms (cleaned and sliced thin
  • 1 small yellow onion, finely chopped
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup orzo (dry)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh parsley, finely chopped

How to Make

  • Step 1: In a saucepan over medium heat, heat oil then saute onions until brown - add the mushrooms and saute more until the mushrooms are soft.

  • Step 2: Add garlic - cook 1 minute more.

  • Step 3: Add the broth, orzo, salt and pepper - bring to a boil .

  • Step 4: Reduced heat to low and cover - simmer covered for 10-14 minutes or until pasta is tender.

  • Step 5: Remove from the heat and stir in the parsley.
