Ingredients

The ingredients are:
  • 1 pound dry red beans
  • Water (boiling)
  • 3 tablespoon oil (vegetable oil or bacon grease)
  • 1 large yellow onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 3 stalks celery, chopped
  • 4 large garlic cloves, minced
  • 6 cups chicken broth
  • 4 ounces sliced bacon (4 slices, cooked and crumbled)
  • 4 bay leaves
  • 2 teaspoons fresh thyme
  • 1/4 teaspoon dried sage
  • 2 tablespoons flat leaf parsley, finely chopped
  • 2 to 4 teaspoons Cajun seasoning (or to taste, I use Slap Ya Mam)
  • 1/2 teaspoon cayenne pepper (optional depending on how hot you want it)
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 pound smoked andouille sausage (thinly sliced)
  • Cooked rice (amount you desire)
  • Scallions, for garnish
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Place dry red beans in a large mixing bowl. Add boiling water, enough to cover the tops. Cover with a plate to seal in the heat. Sit for 3 hours. Drain and rinse in a colander.

  • Step 2: Heat vegetable oil in a large Dutch oven or heavy bottom pot over medium heat. Add onions, saute until they start to soften and become fragrant, approximately 2-3 minutes. Add garlic, bell peppers and celery, saute for an additional 3-4 minutes, stirring frequently.

  • Step 3: Add softened red beans and chicken broth and next 10 ingredients, stirring to combine. Cover and simmer on low heat, stirring periodically, for 2 hours.

  • Step 4: After 2 hours, smash a cup or two of beans with a potato masher. Stir in smoked andouille sausage and continue to cook for 30 minutes, if the mixture becomes dry (similar to refried beans) then add more water to keep the mixture moist, but still thick.

  • Step 5: When ready to serve, spoon over cooked rice, top with chopped scallions.
