Step 1: Cut the top third of garlic heads off so tops of cloves are exposed, rub the cut garlic surface with some oil then over garlic heads, arrange the thyme, rosemary around the garlic heads, season with the salt & pepper then wrap in foil.
Step 2: Roast (until garlic is tender) in moderate oven for approximately 50 minutes. Remove garlic, cool and peel off skin.
Step 3: Whilst garlic is roasting, gently pan fry onion in remaining 1 tablespoon olive oil until soft and golden.
Step 4: Blend the roast garlic, rinsed beans, onions, cumin & sour cream in a food processor and blend until smooth.
Step 5: Spoon into serving bowl and serve with .
