Ingredients

The ingredients are:
  • 1 1/2 cups full-fat ricotta cheese
  • 2 tablespoons finely grated orange peel
  • 4 tablespoons sifted confections sugar (increase for a sweeter taste)
  • 1-1 1/2 cups mini chocolate chips
  • 1 1/2 cups heavy (35%) whipping cream (well chilled)

How to Make

  • Step 1: In a large bowl combine the ricotta with orange peel and 2 tablespoons confectioners sugar.

  • Step 2: Mix in the mini chocolate chips.

  • Step 3: In a glass or stainless steel bowl beat heavy cream on medium-high speed until soft peaks form.

  • Step 4: Gradually add in remaining 2 tablespoons of sugar beating on high speed until stiff peaks form; gently fold into ricotta mixture.

  • Step 5: Chill until ready to use.

  • Step 6: Just before serving pipe into cannoli shells.
