Step 1: In a large bowl combine the ricotta with orange peel and 2 tablespoons confectioners sugar.
Step 2: Mix in the mini chocolate chips.
Step 3: In a glass or stainless steel bowl beat heavy cream on medium-high speed until soft peaks form.
Step 4: Gradually add in remaining 2 tablespoons of sugar beating on high speed until stiff peaks form; gently fold into ricotta mixture.
Step 5: Chill until ready to use.
Step 6: Just before serving pipe into cannoli shells.
