Ingredients

The ingredients are:
  • 1 teaspoon olive oil
  • 1 cup zucchini, diced
  • 1/2 cup yellow onions, minced
  • 1 teaspoon minced garlic
  • 2 cups diced tomatoes (fresh)
  • 2 tablespoons fresh basil, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper (or to taste)
  • 24 ounces halibut fish (4 steaks about 6oz/170g each)
  • 1/3 cup low-fat feta cheese, crumbled (light)

How to Make

  • Step 1: Heat olive oil in a small skillet over medium heat.

  • Step 2: Add zucchini, onions and garlic.

  • Step 3: Cook and stir until zucchini is tender, about 5-6 minutes.

  • Step 4: Remove from heat and stir in tomatoes, basil, salt & pepper.

  • Step 5: Rinse fish steaks and pat dry with paper towels.

  • Step 6: Spray a medium baking pan with cooking spray and place fish in pan.

  • Step 7: Spoon 1/4 tomato/zucchini mixture over each fish steak.

  • Step 8: Top with feta cheese.

  • Step 9: Bake at 450F for 12-15 minutes, depending on thickness of fish.

  • Step 10: Serve immediately.
