Ingredients

The ingredients are:
  • 16 ounces dry elbow macaroni
  • 3/4 cup evaporated milk
  • 1/4 cup whipping cream
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 8 ounces cheddar cheese (smoked cheese, or use all 16 ounces smoked cheese but we made it with half and half)
  • 8 ounces sharp cheddar cheese
  • 1 can (14.5 ounces) tomatoes (diced)
  • 1/4 cup sliced green onions (about 4 green onions)
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup bread crumbs
  • 2 teaspoons olive oil

How to Make

  • Step 1: Prepare macaroni per package directions; drain and return to saucepan and keep warm.

  • Step 2: Preheat oven to 375 degrees F.

  • Step 3: Spray a 13 x 9 inch baking pan with cooking spray.

  • Step 4: In a sauce pan heat the next 5 ingredients (- cayenne pepper) to boiling. Reduce heat and whisk in the cheddar cheese until smooth. Pour sauce over the macaroni along with tomatoes and onion, stirring to combine.

  • Step 5: Pour all in the prepared baking dish.

  • Step 6: In a small bowl combine the parmesan and bread crumbs; stir in the oil. Sprinkle over the macaroni mixture.

  • Step 7: Bake for 20-30 minutes or until edges are bubbly and top is golden brown.
