Ingredients

The ingredients are:
  • 270 grams soba noodles
  • 160 grams asparagus (1 bunch, each spear cut diagonally into 4 pieces)
  • 300 grams cooked shrimp (peeled prawns)
  • 50 grams snow pea sprouts (trimmed)
  • 1 cucumber (Lebanese cucumber, halved lengthways and sliced)
  • 4 spring onions (finely sliced diagonally)
  • FOR DRESSING
  • 2 tablespoons oil (peanut oil)
  • 2 tablespoons lime juice
  • 1 1/2 tablespoons sweet chilli sauce
  • 1 teaspoon fish sauce

How to Make

  • Step 1: Cook noodles in a large pan of boiling water according to packet directions and add the asparagus to the pan for the last 2 minutes of the cooking time and then drain noodles and asparagus into a colander, rinse under cold running water, draining well.

  • Step 2: Place noodles, asparagus, prawns, cucumber, spring onions and sprouts in a large bowl.

  • FOR THE DRESSING

  • Step 3: Combine, oil, lime juice, sweet chilli sauce and fish sauce in a small screw top jar and shake until well combined.

  • Step 4: Drizzle the dressing over the salad and use clean hands to gently turn and combine the ingredients thoroughly.

  • Step 5: Serve salad chilled or at room temperature.
