Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 4 (1 to 1 1/4 pounds) boneless skinless chicken breasts (4 breasts)
  • 1 teaspoon dried Italian seasoning
  • Salt & pepper
  • 1 1/3 cups reduced-sodium chicken broth
  • 1/2 cup apricot preserves
  • 1 tablespoon cornstarch

How to Make

  • Step 1: Heat oil in large oven-proof skillet over medium-high heat. Sprinkle chicken with Italian seasoning, salt & pepper. Add chicken to skillet and brown on both sides. Place in oven and cook until chicken is cooked through, about 30-40 minutes.

  • Step 2: Stir together all remaining 3 ingredients in small bowl until well blended. Remove the skillet from the oven gradually add to chicken in skillet. Return to oven until bubbly and sauce is thickened, around 5 minutes.

  • Step 3: Serve with rice..
