Ingredients

The ingredients are:
  • 2 tablespoons vinegar
  • 1 tablespoon vegetable oil
  • 2 teaspoons chile in adobo, finely chopped
  • 1/4 teaspoon salt
  • 2 cups shredded coleslaw mix (prepared and packaged in the produce section of most markets)
  • 1/4 cup fresh cilantro, chopped
  • 1 (15 ounce) can white beans, drained and rinsed
  • 1 ripe avocado
  • 1/2 cup sharp cheddar cheese, shredded
  • 2 tablespoons red onion, minced
  • 4 (8 to 10-inch) whole-wheat wraps

How to Make

  • Step 1: In a medium bowl, whisk together vinegar, oil, chipotle chile and salt. Add coleslaw mix and cilantro and toss to combine.

  • Step 2: In a seperate medium bowl, mash beans and avocado. Stir in cheese and onion.

  • Step 3: To assemble, lay wraps on board or counter and spread 1/4 of the bean-avocado mixture onto each wrap then top each wrap with 1/4 of the slaw mixture. Roll up, slice in half and serve.
