Ingredients

The ingredients are:
  • 4 boneless loin chops, 1/2" thick or more (or rib chops)
  • 3/4 cup ground saltine crackers
  • 3 tablespoons dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon rubbed sage
  • 1 teaspoon dried parsley
  • 1/4 teaspoon pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons olive oil (to saute the pork)

How to Make

  • Step 1: Coating ... Add the saltines to a small food processor and pulse until well ground. You really want a fine ground mix for this recipe. Transfer to a pie plate or shallow dish. Add the thyme, sage, parsley, salt and pepper, and mix well.

  • Step 2: Pork Chops ... Remove the pork chops from the refrigerator to take the chill off. Mix the honey and mustard together and brush on both sides of the pork chops and add to the coating mixture. Press the mixture into both sides of the chops.

  • Step 3: Saute ... To a large saute pan (preferred non-stick), add the 2 tablespoons of the oil and bring to medium high heat. Add the pork chops and cook on each side until golden brown. Flip and cook the other side until golden brown. Cooking times will depend on the thickness of your chop. Four (4) chops will take about 5 minutes for the first side and 3-4 on the second side for a 1/2" chop. Again, it can vary, just keep an eye on them. Use a thermometer if you are not sure.

  • Step 4: Serve ... Let the chops rest a few minutes before serving. Serve with apple sauce, roasted potatoes and sauteed cabbage for a nice evening dinner. And if you are pressed for time, make the coating and the mustard mix ahead - then just coat and saute. ENJOY!
