Ingredients

The ingredients are:
  • CHEESE MIX
  • 2 cups ricotta cheese (strained)
  • 4 tablespoons honey (orange blossom honey)
  • 1 1/2 teaspoon orange zest
  • Pure almond extract (4-5 drops)
  • FRUIT
  • 1 cup diced peaches (see note below)
  • 1 cup blueberries (see note below)
  • 1 teaspoon brandy
  • 1 teaspoon brown sugar (to taste)
  • GRANOLA AND NUTS
  • Honey cinnamon crunchy granola bars (4 bars, 1.5 oz each, crushed)
  • 1/2 cup walnuts, chopped (toasted)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Walnuts ... I like to toast them; but, it isn't necessary. Simply add to a dry saute pan; and, bring to medium heat. About 3-4 minutes stirring often, until you can smell them. Just keep an eye on them. Once they are done; simply transfer to a plate lined with a paper towel to cool - then chop. You can make these ahead and keep in a sealed ziploc container or bag.

  • Step 2: Ricotta ... I like to make my own; and, it is really simple. But, you can just buy a good quality ricotta and strain it. The easiest way - Just add the ricotta to a coffee filter in a strainer or colander, over a bowl. Cover with plastic wrap; and, a couple of hours in the refrigerator is all it takes. You can even do this a day or two ahead of time. You will be surprised how much water comes out. Then, add the ricotta to a bowl with the honey, zest, and extract; and, mix to combine.

  • Step 3: Note ... Granola - Now, I usually just buy a couple of 'Crunchy Cinnamon Granola' bars; however, you can also buy bulk granola as well. Two (2) bars are approximately 1.5-2 oz depending on the brand. And, you can use more or less if you want; there is no magic amount - add what you enjoy. If you buy the bars; just add them to a baggie/ziploc bag and break them up using a meat mallet, rolling pin, heavy pan, etc. Or, just break them up by hand.

  • Step 4: Fruit ... Now, fresh is always better; and, use what is in season. I happen to love peaches and blueberries; also; they both are really good frozen. Just use your favorite combination. Add the fruit, brown sugar and brandy to a small bowl; and, mix to combine. Make sure to thaw the fruit, if using frozen.

  • Step 5: Parfaits ... Start with a little granola, cheese, nuts, fruit; and repeat. Make as many layers as you want. There is NO right or wrong for this recipe.

  • Step 6: Serve and ENJOY! ... You can make this in wine glasses, small dessert bowls, brandy glasses, parfait glasses, etc. There really is no right way to make this - it is basically what you like. So have fun with it. The fruit ... anything you like; and, the same with the granola. I used a coconut granola with fresh pineapple and papaya; so, experiment a bit.
