Ingredients

The ingredients are:
  • 4 1/2 to 5 pounds potatoes (red)
  • 3/4 pound bacon slices (cooked crisp then minced in a food processor)
  • 6 to 8 large eggs (boiled eggs, chopped)
  • 1 large sweet onion, finely chopped (or 2 bunches green onion, white tops only)
  • Seasoned salt, to taste
  • Ground pepper, to taste
  • FOR DRESSING
  • 2 cups mayonnaise
  • 1 tablespoon granulated sugar
  • 1/4 cup dill relish
  • 2 tablespoons cider vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons yellow mustard
  • 1 teaspoon celery seed
  • 1 to 2 teaspoons dill weed
  • 1/4 cup fresh chopped parsley

How to Make

  • Step 1: Place potatoes in a large pot and cover with cold water. Boil until fork tender. Rinse with cold water. When cool enough to handle, chop. Transfer to a large bowl. Add chopped eggs, onion and bacon. Set in fridge until chilled.

  • Step 2: In a small bowl combine all the dressing ingredients .Whisk to combine. Pour over potato mixture. Stir very well to combine. Season with salt and pepper.

  • Step 3: Chill until ready to serve.
