Ingredients

The ingredients are:
  • 2 pounds cauliflower (cut into florets)
  • 8 ounces sharp cheddar cheese (shredded, divided)
  • 8 ounces Monterey Jack cheese (shredded, divided)
  • 8 ounces cream cheese (softened)
  • 1/4 cup whipping cream
  • 1/2 teaspoon garlic powder (could use more if you want more garlic flavor, be careful though, garlic powder is very strong!)
  • 1 1/2 cups sliced green onions
  • 6 to 8 ounces sliced bacon (6-8 slices, cooked and crumbled)
  • Salt & pepper to taste

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Butter a 2-3 quart casserole dish.

  • Step 3: Steam cauliflower florets until tender (do not allow to get really soft and mushy).

  • Step 4: While cauliflower steams, cream together 6 oz of the shredded cheddar, 6 oz of the Monterey Jack, softened cream cheese and whipping cream and garlic powder.

  • Step 5: Stir in sliced green onions, chopped bacon, and garlic powder. Set aside.

  • Step 6: Drain steamed cauliflower VERY WELL. Add to cheese mixture then stir together.

  • Step 7: Taste for seasoning, and add as necessary.

  • Step 8: Pour into a casserole dish and sprinkle on remaining cheddar and Monterey Jack cheese.

  • Step 9: Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly.
