Ingredients

The ingredients are:
  • 5 garlic cloves, minced
  • 1/3 cup olive oil
  • 3 yellow onions, sliced into thin crescents
  • 1/2 cup fresh parsley, finely chopped
  • 1 pound spaghetti pasta (or 1 lb linguine)
  • Water for cooking pasta
  • 3 large eggs
  • 4 tablespoons grated Parmesan cheese
  • 1/2 cup fresh basil, torn into small pieces
  • Fresh ground pepper
  • Parsley
  • Basil

How to Make

  • Step 1: Brown garlic in olive oil.

  • Step 2: Add onions and gently saute until crunchy and brown.

  • Step 3: When onions are almost done, add parsley and saute until limp.

  • Step 4: Cook pasta in boiling water until al dente.

  • Step 5: While pasta is cooking, beat eggs, cheese, and basil together.

  • Step 6: Drain pasta and place in serving bowl.

  • Step 7: Fold egg mixture into hot pasta.

  • Step 8: Add onion mixture and mix well.

  • Step 9: Sprinkle with pepper and top with additional parsley, basil and Parmesan.
