  • 1/2 pound dry lentils (red lentils, washed and picked over)
  • 1 quart water
  • 1/2 cup olive oil
  • 1 yellow onion, chopped
  • 2 garlic cloves, crushed
  • 1/2 teaspoon fennel seed, crushed
  • Salt (optional)

How to Make

  • Step 1: Place lentils and water in a large pot.

  • Step 2: Bring to a boil and boil for 5 minutes.

  • Step 3: Remove from heat and set aside to soak for 1 hour.

  • Step 4: Return pot to heat.

  • Step 5: Add oil, onion, garlic and fennel.

  • Step 6: Simmer gently for 35 minutes, or until lentils are tender.

  • Step 7: Season with salt if desired.
