Ingredients

The ingredients are:
  • 1 1/2 to 2 pounds boneless beef sirloin (cut into 1-inch cubes)
  • FOR MARINADE
  • 1 large yellow onion, cut into chunks
  • 1 green bell pepper, seeded and cut into chunks
  • 6 garlic cloves, peeled
  • 1 to 4 scotch bonnet chile peppers (coarsely chopped, or 4-6 jalapenos)
  • 2 tablespoons chopped fresh ginger
  • 1 1/2 teaspoons salt
  • 1 teaspoon fresh ground black pepper
  • 1/4 cup oil (peanut oil)
  • FOR KEBOBS
  • 2 large green bell peppers, seeded and cut into 1-inch pieces
  • 1 large yellow onion, cut into 1-inch pieces
  • 1 1/2 cups flour (peanut flour, see note)

How to Make

  • Step 1: Place beef in a large baking dish and set aside.

  • Step 2: Combine pepper, onion, garlic, chilies, ginger, salt and pepper in a food processor.

  • Step 3: Process until finely chopped.

  • Step 4: Add oil and process into a smooth paste.

  • Step 5: Add mixture to beef and toss thoroughly to coat.

  • Step 6: Cover and refrigerate 2-3 hours.

  • Step 7: Preheat grill to high.

  • Step 8: Remove beef and thread it onto skewers, alternating with pieces of pepper and onion.

  • Step 9: Place peanut flour on a large plate.

  • Step 10: Roll the kebabs in the peanut flour until generously coated.

  • Step 11: Oil the grill grate.

  • Step 12: Grill kebabs, turning with tongs, until beef is cooked to taste, 2-3 minutes per side (8-12 minutes total) for medium-rare.

  • Step 13: Note: if you can't find peanut flour, combine 1 1/4 cups dry-roasted peanuts and 1/4 cup all purpose flour in a food processor. Pulse until mixture is finely ground. Be careful not to overprocess or you'll have peanut butter.
