Step 1: Preheat oven to 400°F.
Step 2: Cook potatoes and garlic in boiling salted water until softened, about 20 minutes.
Step 3: Meanwhile, sprinkle Cajun seasoning over pork and rub in with hands.
Step 4: Heat a large skillet over medium-high heat and brown pork on all sides.
Step 5: Add jalapeno and 2 tablespoons dried minced onions and cook, stirring, 1 minute.
Step 6: Add beans and mushrooms and cook, stirring, 1 minute.
Step 7: Stir in tomato sauce, garlic powder, Italian seasoning, and paprika, and cook, stirring, until heated through.
Step 8: Stir in half the cheese and cook, stirring, just until heated through.
Step 9: Remove from heat.
Step 10: Drain potatoes and garlic.
Step 11: Mash potatoes, garlic, margarine, and milk together.
Step 12: Spoon pork mixture into a lightly greased 9"x13" baking pan.
Step 13: Spoon potato mixture over pork mixture and smooth top with a spatula.
Step 14: Sprinkle remaining cheese and dried minced onions over top.
Step 15: Bake for 20-30 minutes, or until casserole is cooked and cheese is browned.
