Ingredients

The ingredients are:
  • 2 cups onion, chopped
  • 1 cup green pepper, chopped
  • 1 cup celery, sliced
  • 3 tablespoons butter or margarine
  • 2 beef bouillon cubes
  • 1/2 to 1 pound ground beef lean
  • 1 quart tomato juice
  • 1/2 cup uncooked rice, long grain
  • 1/2 teaspoon salt
  • 1/2 tteaspoon pepper
  • 1 teaspoon paprika
  • 1 bay leaf

How to Make

  • Step 1: In a deep skillet saute onion, peppers, and celery in butter till tender.

  • Step 2: Add beef and cook till brown.

  • Step 3: Drain and put back in skillet.

  • Step 4: Add remaining ingredients and still well.

  • Step 5: Bring to boil, stir and cover.

  • Step 6: Simmer about 20 to 30 minutes.

  • Step 7: Serve immediately.

  • Step 8: If the soup is not served immediately it will require extra broth because the rice will absorb the liquid.
