Step 1: Make dough: Combine flour,salt, and sugar in food processor.
Step 2: Pulse a few times to mix.
Step 3: Add butter and process until mixture resembles cornmeal.
Step 4: Remove and place in a bowl.
Step 5: Gradually mix in enough cold water to form dough into a ball.
Step 6: Wrap in plastic wrap and chill 30 minutes.
Step 7: Make filling: While dough is chilling, peel, slice and pit the peaches.
Step 8: Add brown sugar, spices and cornstarch.
Step 9: Toss to mix.
Step 10: Preheat oven to 375°F.
Step 11: Roll dough out to fit a 9" deep dish pie pan.
Step 12: Place dough in pan and crimp edges.
Step 13: Prick bottom of dough with a fork in several places.
Step 14: Pour the peach mixture into the crust.
Step 15: Make topping: Beat the butter and brown sugar together.
Step 16: Stir in the nuts.
Step 17: Add just enough flour to make mixture crumbly.
Step 18: Spread mixture over top of peaches.
Step 19: Bake for 40-60 minutes, or until pie is bubbly, and streusel and crust are browned.
