  • SWEET CRUST
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons granulated sugar
  • 10 tablespoons unsalted butter (cold, cut in pieces)
  • 4 tablespoons cold water (approximately)
  • FOR FILLING
  • 2 2/3 pounds peaches
  • 2/3 cup brown sugar
  • Ground nutmeg
  • Ground ginger (optional)
  • 2 tablespoons cornstarch
  • FOR STREUSEL
  • 4 tablespoons butter (at room temperature)
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts
  • 1/2 cup all-purpose flour (approximately)

How to Make

  • Step 1: Make dough: Combine flour,salt, and sugar in food processor.

  • Step 2: Pulse a few times to mix.

  • Step 3: Add butter and process until mixture resembles cornmeal.

  • Step 4: Remove and place in a bowl.

  • Step 5: Gradually mix in enough cold water to form dough into a ball.

  • Step 6: Wrap in plastic wrap and chill 30 minutes.

  • Step 7: Make filling: While dough is chilling, peel, slice and pit the peaches.

  • Step 8: Add brown sugar, spices and cornstarch.

  • Step 9: Toss to mix.

  • Step 10: Preheat oven to 375°F.

  • Step 11: Roll dough out to fit a 9" deep dish pie pan.

  • Step 12: Place dough in pan and crimp edges.

  • Step 13: Prick bottom of dough with a fork in several places.

  • Step 14: Pour the peach mixture into the crust.

  • Step 15: Make topping: Beat the butter and brown sugar together.

  • Step 16: Stir in the nuts.

  • Step 17: Add just enough flour to make mixture crumbly.

  • Step 18: Spread mixture over top of peaches.

  • Step 19: Bake for 40-60 minutes, or until pie is bubbly, and streusel and crust are browned.
