The ingredients are:
  • 1 pound dried white beans (2 cups dry)
  • Water
  • 1 cup olive oil (or vegetable oil)
  • 32 ounces yellow onions (chopped, 4 onions)
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 1/4 teaspoon dried thyme
  • 1/2 cup vinegar

How to Make

  • Step 1: Soak beans in cold water at least 8 hours, or overnight.

  • Step 2: Drain. Add fresh water to cover. Bring to a boil, reduce heat, and simmer for 1 1/2 hours, or until tender. Drain.

  • Step 3: Heat oil in a saucepan.

  • Step 4: Add onions and saute 10 minutes, stirring frequently.

  • Step 5: Add beans, paprika, salt, thyme and vinegar.

  • Step 6: Cook over low heat for 15 minutes, stirring occasionally.

  • Step 7: Serve hot or cold.
