Ingredients

The ingredients are:
  • 1 package (8.5 ounce) corn bread muffin mix (Jiffy)
  • 1 pound ground beef (cooked, seasoned with 1 package taco seasoning mix, can add an onion and some garlic while cooking)
  • 8 ounces sour cream
  • 2 cups shredded colby jack cheese (divided, or cheddar or mexican cheese, shredded)
  • 1/2 cup chopped yellow onion
  • 1 Roma tomato (chopped)
  • Shredded lettuce

How to Make

  • Step 1: In a large bowl, prepare cornbread mix based according to instructions on the box.

  • Step 2: Spread into a greased 8 x 8 baking pan. Bake at 350 for 20 minutes (no longer you will put back in oven to finish baking).

  • Step 3: Remove cornbread from oven and spread the cooked ground beef over corn bread.

  • Step 4: Combine sour cream and cup shredded cheese and yellow onion. Spread over meat mixture.

  • Step 5: Bake for 15 minutes longer or until heated through and cheese is melted.

  • Step 6: Sprinkle with tomato, lettuce and remaining 1 cup of cheese.
