Step 1: Preheat oven to 350 degrees F.
Step 2: Shape dough pieces into balls. arrange on cookie sheet and flatten to 1/2 inch thickness; press nuts in each cookie. Bake until golden (12-20 minutes). Cool completely on the cookie sheet.
Step 3: Meanwhile mix ice cream, mint and extract in a bowl; place in freezer until ready to use.
Step 4: Line baking sheet with foil; place 1/4 cup ice cream on flat side of cookie; top with flat side of second cookie. Repeat for all cookies and ice cream forming 8 ice cream sandwiches. Freeze until ice cream begins to firm (10 minutes).
Step 5: Melt chocolate chips in microwave safe bowl on low setting in 15 second intervals, stirring often.
Step 6: Dip sandwiches halfway into the chocolate and return to baking sheet. Freeze for at least 30 minutes or up to one day.
