The ingredients are:
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried currants
  • 1/2 cup beer
  • 1/4 cup butter
  • 1/2 cup firmly packed brown sugar (light)
  • 1 large egg
  • 1 egg yolk
  • 1/2 teaspoon vanilla

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Sift flour, baking soda, cinamon and salt together and set aside.

  • Step 3: Heat beer in a small saucepan over medium-low heat.

  • Step 4: Add currants and simmer for 5 minutes.

  • Step 5: Cool and drain, reserving 3 tablespoons liquid.

  • Step 6: Beat butter, brown sugar, egg and egg yolk together until fluffy.

  • Step 7: Stir in flour mixture, reserved beer, and vanilla.

  • Step 8: Drop by teaspoonfuls 2" apart on greased baking sheets.

  • Step 9: Bake for 12 minutes, or until lightly browned around the edges.
