  • 1 cup finely shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/8 teaspoon ground nutmeg (can use more)
  • 1 small garlic clove minced
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1 pound fresh baby spinach leaves (cooked, hand-squeezed very dry, then finely chopped
  • 1 large egg, lightly beaten
  • Salt and freshly ground black pepper, to taste
