Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • 1/2 whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 1/2 cups unsweetened applesauce
  • 1/3 cup oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini (packed)
  • 1/2 cup mini semi-sweet chocolate chips

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Spray 2 8'x4" loaf pans with cooking spray; set aside.

  • Step 3: In a large bowl, combine both flours, cocoa, baking powder, baking soda, cinnamon and salt; set aside.

  • Step 4: In a medium bowl, whisk together sugar, eggs, applesauce, vegetable oil and vanilla.

  • Step 5: Stir in zucchini.

  • Step 6: Add wet ingredients to dry ingredients and mix just until dry ingredients are moistened.

  • Step 7: Fold in chocolate chips.

  • Step 8: Spread batter evenly in prepared pans.

  • Step 9: Bake for 50 minutes, or until a wooden pick inserted in center of loaves comes out clean.

  • Step 10: Cool for 5 minutes in pans.

  • Step 11: Remove from pans and let cool on a wire rack before serving.
