Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 garlic cloves, sliced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 can (14.5 ounce) tomatoes (drained)
  • 1/4 cup white wine
  • 2 bay leaves
  • Pinch saffron threads
  • Kosher salt
  • Pepper
  • 4 (5 ounce) cod fish fillets (skinless)

How to Make

  • Step 1: In a skillet over medium heat heat the oil and then add the garlic and red pepper flakes cooking for 3-5 minutes or until fragrant and garlic should not take on any color.

  • Step 2: Stir in tomatoes, crushing them with your hands or a spoon, wine, bay leaves, saffron, and 1/2 cup water. Bring to a boil, reduce heat and simmer until favors meld (5-10 minutes); season with salt and pepper.

  • Step 3: Reduce heat to medium low; season cod with salt and pepper and place in skillet. Cover and cook at a bare simmer until cod is done and beginning to flake (5-10 minutes depending on the thickness of the fish).

  • Step 4: Transfer cod to shallow bowls and spoon poaching liquid over.
