Ingredients

The ingredients are:
  • 2 cups basil leaves
  • 1/2 cup cashew nuts
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves, chopped
  • 1/4 cup lemon juice
  • 1/2 cup olive oil (extra virgin, more may be preferred)

How to Make

  • Step 1: Place basil, cashews, parmesan, garlic and lime juice in a food processor. Pulse until chopped. With motor running, gradually add oil. Process until well combined. (You may like to add more oil if you like your pesto thinner).

  • Step 2: Place in an airtight container and refrigerate for up to 4 days.
