Step 2: Cover and refrigerate for 1-2 hours until firm.
Step 3: Using hands, roll the mixture into golf-ball-size fritters, and flatten slightly.
Step 4: Dredge lightly in flour, using a small sieve.
Step 5: Heat olive oil in a large frying pan.
Step 6: Cook fritters in batches for about 3-5 minutes until golden brown on both sides.
Step 7: Drain on paper towel and serve immediately.
Step 8: Garnish with extra dill and lemon.
