Ingredients

The ingredients are:
  • 1/2 cup raisins
  • 4 tablespoons rum
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Grated nutmeg (pinch)
  • 2 cups milk
  • 1/4 cup melted butter
  • 200 grams cubed bread (4 cups cubed 1/2 inch cubes)
  • 1 1/2 cups diced fruit (do not use bananas)

How to Make

  • Step 1: Preheat oven to 325 degrees F.

  • Step 2: Grease 12 muffin cups.

  • Step 3: In a microwaveable bowl combine the raisins and rum; microwave on high for 20 seconds and set aside.

  • Step 4: In a bowl cream the eggs and sugar. Stir in vanilla, nutmeg and milk. Add the melted butter and mix well.

  • Step 5: In a large bowl combine the bread and the raisin mixture and then add the milk mixture. Stir in the mixed fruit but do not mash the fruit.

  • Step 6: Divide mixture among the muffin cups and bake until golden brown (35-40 minutes). Remove from muffin tin and place on individual plates; garnish with confectioners' sugar if desired.
