Ingredients

The ingredients are:
  • 4 cups diced potatoes (peeled)
  • 2 tablespoons oil
  • 2 tablespoons butter
  • 2 yellow onions (peeled and chopped)
  • 450 grams ham (3 cups, cut into a small dice)
  • Salt
  • Pepper
  • 4 to 6 large eggs
  • 1 tablespoon chopped parsley

How to Make

  • Step 1: Rinse potatoes in cold water; drain; pat dry.

  • Step 2: In a skillet over medium heat heat half the butter and half the oil and then add the potatoes; stir and shake pan so they will brown evenly. When cooked remove the potatoes to a dish to keep warm

  • Step 3: In the same skillet add the rest of the butter and oil and add the onion; cooking until soft and browned. Add the meat and brown on all sides; stirring and shaking the pan. Return the cooked potatoes to the pan and stir to mix. Sprinkle with salt and pepper. Transfer to a serving dish and keep warm.

  • Step 4: In the same skillet cook the eggs only on one side. Serve the hash with the egg on top and sprinkle with parsley.
