Step 1: Rinse potatoes in cold water; drain; pat dry.
Step 2: In a skillet over medium heat heat half the butter and half the oil and then add the potatoes; stir and shake pan so they will brown evenly. When cooked remove the potatoes to a dish to keep warm
Step 3: In the same skillet add the rest of the butter and oil and add the onion; cooking until soft and browned. Add the meat and brown on all sides; stirring and shaking the pan. Return the cooked potatoes to the pan and stir to mix. Sprinkle with salt and pepper. Transfer to a serving dish and keep warm.
Step 4: In the same skillet cook the eggs only on one side. Serve the hash with the egg on top and sprinkle with parsley.
