Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small yellow onion (diced)
  • 1 large celery rib (diced)
  • 4 cloves garlic, minced
  • 2 (1/2 pound) fresh boneless skinless chicken breasts (2 large breasts, cut into small cubes)
  • 6 ounces rice (3/4 cup dry Basmati)
  • 1 can (10 ounce) condensed cream of chicken soup (undiluted)
  • 2 to 3 cups chicken broth
  • 12 ounces fresh broccoli (2 cups florets)
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper, to taste

How to Make

  • Step 1: Heat olive oil in a large skillet. Add chopped onion, celery, garlic and cubed chicken. Cook on medium heat for a few minutes until chicken start to brown a bit. Season with salt and pepper to taste.

  • Step 2: Add dry rice, cream of chicken soup and chicken broth NOTE: start with 2 cups of chicken broth and if more is needed until rice is fully cooked, add more.

  • Step 3: Cook over medium heat until rice is fully cooked, should take about 15 minutes or so. Taste for seasoning and adjust as necessary.

  • Step 4: Add half the cheese (3/4 cup) and the broccoli florets and continue cooking for 2 more minutes, until broccoli softens a bit. Sprinkle remaining cheese (3/4 cup) and allow to melt.
