Ingredients

The ingredients are:
  • 140 grams tortilla (2 spinach wraps, 10-inch, gluten free ones are also available)
  • 1 small (1/2 pound) cucumber (peeled seeded, very thin sliced)
  • 1 cup baby spinach (stems removed and torn)
  • 1 avocado, thin sliced
  • 6 to 8 tablespoons cream cheese (chive)
  • 1/3 pound prosciutto ham (8 thin slices)
  • 1 tablespoon fresh chopped dill
  • 2 tablespoons scallions, small diced (white and green parts)

How to Make

  • Step 1: Cucumber ... After slicing the cucumber, let them set on a paper towel to dry.

  • Step 2: Filling ... Add the cream cheese, dill, and scallions to a small bowl; and, mix to combine.

  • Step 3: Wrap ... Spread the cream cheese mixture over the spinach wrap, leaving about 1/2" from the bottom and side edges; and about 1" from the top edge. Then, top with the prosciutto slices, cucumber, avocado, and baby spinach. Then, tightly roll. Transfer to a sheet of plastic wrap; and roll up twisting the ends of the plastic wrap, to make a firm roll. You want to refrigerate it at least 2 hours or more before serving.

  • Step 5: It's done ... SERVE and ENJOY! ... Simply unwrap, trim the 2 ends off; then, slice into small rounds. Perfect as appetizers or snacks.
