Ingredients

The ingredients are:
  • 18 to 24 ounces English cucumber (1 1/2 to 2 cucumbers, or seedless cucumber, thin sliced)
  • 2 small scallions, diced (white and green parts)
  • 1 large avocado (mashed)
  • 3 tablespoons chopped black olives
  • 3 tablespoons cream cheese (softened)
  • 2 teaspoons capers (chopped)
  • 2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons chopped fresh dill
  • 1 1/2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • Kosher salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Cucumber ... First, cut a thin slice off of one side of the cucumber. Then, using a peeler (my choice) or a mandolin; cut long thin slices of the cucumber. Set them on a paper towel to try.

  • Step 2: Filling ... Add the avocado, scallions, cream cheese, olives, capers, lemon juice, dill, parsley, basil, salt and pepper to a small bowl; and, mix to combine. Season to taste; the olives and capers are salty - so, go easy with the salt.

  • Step 3: Finish ... Spread the filling on the cucumber, leaving a little room at one end, so it doesn't 'squish' out; as you roll it. Then, roll; and, secure with a toothpick.

  • Step 4: Serve and ENJOY! ... Easy and delicious. A great appetizer for any time of the year. Plate and cover with plastic wrap until ready to serve. Keep refrigerated. These are not good to make too far in advance. Even though their is lemon juice in the filling; the avocado can start to brown. So plan are making these just a couple of hours before serving.
