Ingredients

The ingredients are:
  • 4 pounds beef flank (or London broil)
  • 2 teaspoons black pepper
  • 2 teaspoons chili powder
  • 3 teaspoons garlic powder
  • 1 teaspoon cayenne pepper (more if you like it really hot)
  • 2 teaspoons onion powder
  • 1 teaspoon liquid smoke
  • 1/4 cup soy sauce (or 1/4 cup low sodium soy sauce)
  • 1/2 cup Worcestershire sauce
  • 1/2 cup hot sauce (Frank’s red hot sauce)

How to Make

  • Step 1: Trim all fat off meat, then cut the steak in to 4 inch strips, about 1/2 inch thick, it’s easier to cut meat partially frozen. Pound meat lightly, you don’t want it too thin.

  • Step 2: In a large bowl combine black pepper with next 8 ingredients. Add in beef strips, using your hands (fitted with plastic gloves) toss all together until the strips are well coated. Cover and refrigerate overnight (24 hours)

  • Step 3: Line cookie sheets with tin foil.

  • Step 4: Place steak strips on sheets, don’t overlap meat.

  • Step 5: Set oven at lowest temperature. (150-175°F).

  • Step 6: Bake six hours, turning after three hours.

  • Step 7: Jerky is done when meat is dried out, depending on your oven. Worth the wait!
