Step 1: In small bowl toss together sugar, flour, butter, cinnamon and oatmeal mix till crumbly.
Step 2: In large bowl mix flour, soda, baking powder, spices and salt. here is where you substitute gluten-free flour and add xantham gum.
Step 3: In medium bowl mix sugar, oil, egg and vanilla until smooth.
Step 4: Stir oil mixture into flour mixture alternately with buttermilk.
Step 5: Fold in apples. mix to just combine.
Step 6: Spoon into greased muffin cups 3/4 full.
Step 7: Sprinkle topping over evenly.
Step 8: Bake 350 20-30 minutes or evenly brown and tops spring back.
