  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour (or gluten-free baking mix)
  • 1/2 cup oats (oatmeal)
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter
  • FOR MUFFINS
  • 3/4 cup brown sugar
  • 1/3 cup oil
  • 1 large egg
  • 3/4 teaspoon vanilla
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon xantham gum (if gluten-free flour is used)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cloves
  • 1/2 cup buttermilk (or sour milk)
  • 1 cup grated apple (Granny Smith apple)
  • 1/2 cup diced apple (Granny Smith apple)

How to Make

  • FOR THE TOPPING

  • Step 1: In small bowl toss together sugar, flour, butter, cinnamon and oatmeal mix till crumbly.

  • FOR THE MUFFINS

  • Step 2: In large bowl mix flour, soda, baking powder, spices and salt. here is where you substitute gluten-free flour and add xantham gum.

  • Step 3: In medium bowl mix sugar, oil, egg and vanilla until smooth.

  • Step 4: Stir oil mixture into flour mixture alternately with buttermilk.

  • Step 5: Fold in apples. mix to just combine.

  • Step 6: Spoon into greased muffin cups 3/4 full.

  • Step 7: Sprinkle topping over evenly.

  • Step 8: Bake 350 20-30 minutes or evenly brown and tops spring back.
