  • 1 head (2 pounds) cauliflower (1 head, shaved thin on mandolin)
  • 3/4 cup mayonnaise
  • 1/2 cup sliced pimiento-stuffed olives
  • 2 tablespoons minced yellow onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, to taste

  • Step 1: Into large mixing bowl, slice each section of cauliflower in very thin slices.

  • Step 5: Cover and refrigerate overnight
