Ingredients

The ingredients are:
  • 1 pound cooked pasta
  • 1 tablespoon olive oil
  • 1 1/2 pounds raw shrimp (large shrimp, peeled)
  • 3 large garlic cloves, finely chopped
  • 1 piece (1 1/4 inch) grated gingerroot
  • 1/3 cup dry white wine
  • 1 1/3 cups creme fraiche (or sour cream)
  • 1 1/2 cups fresh arugula
  • Salt and black pepper, to taste

How to Make

  • Step 1: Heat the oil in a sauce pan. Add the shrimp and stir-fry (1 minute). Add the garlic and ginger and stir-fry (30 seconds).

  • Step 2: Add the wine and bring to a boil. Lower heat to simmer and stir for 1 minute. Mix in the creme fraiche or sour cream and heat through for several minutes (3-4 minutes).

  • Step 3: Add the arugula and cook until wilted (1-2 minutes). Season with salt and pepper. Toss with cooked pasta.
