Step 1: Heat the oil in a sauce pan. Add the shrimp and stir-fry (1 minute). Add the garlic and ginger and stir-fry (30 seconds).
Step 2: Add the wine and bring to a boil. Lower heat to simmer and stir for 1 minute. Mix in the creme fraiche or sour cream and heat through for several minutes (3-4 minutes).
Step 3: Add the arugula and cook until wilted (1-2 minutes). Season with salt and pepper. Toss with cooked pasta.
