Ingredients

The ingredients are:
  • 1 pound ground chicken (mix of 1/2 white and 1/2 dark meat, don't go with all white meat!)
  • 2 tablespoons mayonnaise (heaping)
  • 1/2 cup shredded cheddar cheese (USE SMOKED SHARP cheddar cheese)
  • 1/3 cup grated parmesan cheese
  • 3 garlic cloves, minced (if you are garlic crazy, add more)
  • 1 teaspoon Club House La Grille Montreal For Chicken dry seasoning, more to season when grilling)
  • 1 tablespoon Worcestershire sauce (heaping)
  • FOR THE FRESH BASIL MAYO TOPPING
  • 1/3 cup mayonnaise
  • 1/4 cup finely chopped fresh basil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely shredded lemon zest
  • Pepper (to taste)
  • Salt (to taste)
  • 1/4 teaspoon garlic powder
  • TO SERVE
  • 4 (6 ounces) bread buns (onion kaiser rolls, split)
  • 8 ounces bacon slices (8 sliced, or more, cooked until crisp, then crumbled)
  • Tomato slices
  • 4 leaves romaine lettuce

How to Make

  • FOR THE BURGERS

  • Step 1: In a large bowl, gently mix ground chicken, mayonnaise, both cheeses, garlic and Montreal Seasoning. Form into 4 burgers about 3/4 in. thick, making a slight depression in center of each patty (this helps keep burgers flat as they cook). Put on a plate,, cover with plastic wrap and refrigerate 6 hours or longer.

  • FOR THE MAYO TOPPING

  • Step 2: In a blender, whirl mayonnaise, basil, lemon juice, and lemon zest together, add salt & pepper and garlic powder, refrigerate until ready to use.

  • TO GRILL THE BURGERS

  • Step 3: When your ready to grill the chicken burgers: Prepare a charcoal or gas grill for medium heat (350° to 450°; you can hold your hand 5 in. above cooking grate only 5 to 7 seconds). Using a silicone brush or oiled paper towels, lightly oil cooking grate.

  • Step 4: Grill burgers, covered, turning once, seasoning each side with a little more La Grille chicken seasoning while grilling. Grill until browned and no longer pink inside (cut to test or use a meat thermometer, 8 to 10 minutes total.

  • Step 5: Transfer burgers to a clean plate.

  • Step 6: Place buns, cut sides down, on grill until lightly browned, 30 seconds.

  • TO ASSEMBLE THE BURGERS

  • Step 7: Spread toasted sides of buns with basil mayonnaise. Set a chicken patty on each bun bottom and top each with 2 strips bacon, a tomato slice, and a lettuce leaf. Cover with bun top. Enjoy!
