Step 1: Preheat oven to 425°F.
Step 2: On a "for raw meat only" cutting board, put chicken breasts in a zippered plastic bag. Pound them out till they're equal thickness throughout.
Step 3: In a 8x8" baking dish, mix mustard, oil and water with a fork. In another 8x8" baking dish, mix panko, salt, pepper, thyme, parmesan cheese and oil with another fork till well combined.
Step 4: Coat each side of chicken breasts with mustard mixture then in the panko mixture.
Step 5: Prepare a cookie sheet by lining it with foil. Then put a cooling rack on it and spray with non-stick cooking spray. Place chicken breasts on cooling rack in sheet pan.
Step 6: Place in preheated 425°F oven and bake 35-45 minutes or until nicely browned, turning over half-way through.
