Ingredients

The ingredients are:
  • 1 pound fresh salmon (ground)
  • 1/3 cup panko crumbs
  • 1 large egg
  • 2 tablespoons fat-free Greek yogurt
  • 2 tablespoons fresh dill (or 2 teaspoons dried dill weed
  • 1 tablespoon sliced green onion (use white & green parts)
  • 1 tablespoon fresh lemon juice
  • Salt & pepper to taste
  • Olive oil spray
  • 1 cucumber (unpeeled, sliced into 12 slices)
  • Lettuce leaves (4 leaves)
  • 6 ounces bread buns (4 hamburger buns, optional)
  • YOGURT SAUCE
  • 1/4 cup fat-free Greek yogurt (0 Fat)
  • 1/4 cup low-fat sour cream
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill weed)
  • Salt to taste

How to Make

  • Step 1: Combine ground salmon, panko, lightly beaten egg, 2 tablespoons yogurt, dill, green onions, lemon juice. salt & pepper.

  • Step 2: Form into 4 patties about 1/2" thick.

  • Step 3: Lightly spray both sides of the patties with olive oil.

  • Step 4: Pan fry, medium high heat, for apprx 4 minutes each side.

  • Step 5: While the patties are cooking combine the yogurt sauce ingredients , mix well.

  • Step 6: Serve on a bun topped with the yogurt sauce, cucumber slices & a lettuce leaf or serve as pattie with dinner topped with the cuumber slices & yogurt sauce.
