Ingredients

The ingredients are:
  • 3 1/2 to 4 pound whole chicken (cut into pieces)
  • 1 quart buttermilk
  • Salt & pepper
  • 3 large eggs
  • 1/3 cup water
  • 1/2 cup hot sauce (Louisiana Hot Sauce)
  • 4 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 2 teaspoon ground black pepper
  • 2 teaspoon paprika
  • 1 teaspoon cayenne pepper (or more)
  • 2 teaspoons salt
  • Peanut Oil, for frying

How to Make

  • Step 1: Place cut-up chicken in a large bowl, and cover with buttermilk. Cover and refrigerate 24 hours.

  • Step 2: In a large bowl, add eggs, water, and hot sauce. Whisk until combined.

  • Step 3: In a large bowl, mix flour, garlic powder, black pepper, paprika, cayenne and salt.

  • Step 4: Remove chicken from buttermilk.

  • Step 5: Place all chicken pieces in bowl with flour mixture. Toss the chicken until all pieces are evenly coated.

  • Step 6: Remove chicken pieces one at a time, shaking excess flour. Dip each piece in the egg mixture, and return to bowl of flour. After all pieces of been dipped in the egg mixture and put back in the bowl, give it a second shake to coat chicken pieces again.

  • Step 7: Heat oil in deep fryer or deep pan to 350 degrees. Working in batches, drop each piece of chicken into the hot oil. Fry for 15-18 minutes, or until golden brown, turning occasionally if oil does not completely cover chicken.

  • NOTE: dark meat chicken takes longer to cook than white meat. Watch your wing segments, as well; these will finish cooking first
