Ingredients

The ingredients are:
  • 4 (5 pounds) Cornish chicken hens
  • 3 tablespoons olive oil (separated)
  • Salt & pepper to taste
  • 2 lemons
  • Fresh rosemary (8 sprigs)
  • 32 cloves garlic, peeled
  • 1/3 cup dry white wine
  • 1/3 cup low-sodium chicken broth

How to Make

  • Step 1: Preheat oven to 450f.

  • Step 2: Rub each hen all over with olive oil (use apprx 1 tablespoon for all 4 hens).

  • Step 3: Cut one lemon into 4 wedges. Place a wedge of lemon, a medium size sprig of rosemary and 4 cloves of garlic in the cavity of each hen.

  • Step 4: Season hens with salt & pepper.

  • Step 5: Place the hens in a large roasting pan and arrange the remaining garlic cloves around them.

  • Step 6: Roast in pre-heated 450f oven for 25 minutes

  • Step 7: Reduce heat to 350f.

  • Step 8: Mix together the wine, broth, and remaining 2 tablespoons of oil. Pour over the hens

  • Step 9: Baste the hens several times with the wine mixture.

  • Step 10: Continue roasting further 25 minutes or until the hens are golden and juices run clear.

  • Step 11: Transfer hens to a cutting board and cover with foil to keep warm.

  • Step 12: Continue boiling the pan juices for apprx. 6 minutes or until they are sauce consistency.

  • Step 13: Cut the hens in half and arrange on heated plates.

  • Step 14: Spoon sauce with the garlic cloves over the hens.

  • Step 15: Cut remaining lemon in slices and place a slice on the plates with the hen.

  • Step 16: Garnish with a small rosemary sprig and enjoy.
