Ingredients

The ingredients are:
  • 2 tablespoons melted butter
  • 1 medium yellow onion (diced)
  • 1 package (10 ounce) frozen chopped broccoli
  • 2 boxes (8.5 ounce) corn muffin mix (Jiffy if you want authentic)
  • 1/2 cup whole milk
  • 2 garlic cloves, minced
  • 8 ounces cottage cheese (Small Curd Cottage Cheese, 1 cup)
  • 4 large eggs (slightly whipped)
  • Salt, pinch
  • 1 cup grated cheddar cheese
  • 2 tablespoons grated cheddar

How to Make

  • Step 1: Preheat Oven to 375 degrees.

  • Step 2: Prepare a large 11X17 baking dish (non-Stick Spray).

  • Step 3: You can also make this in a Cast Iron Skillet (Great Presentation) or individual oven safe ramekins.

  • Step 4: In a large heavy bottomed skillet, melt the butter and add the diced onion and thawed chopped broccoli. Saute for about 5 minutes until the Onion softens

  • Step 5: And turns translucent.

  • Step 6: Add the garlic and saute for an additional 2 minutes.

  • Step 7: Mix all remaining ingredients (except a bit of the Cheddar Cheese reserved for garnish).

  • Step 8: In a large mixing bowl, fold in the onion broccoli mix.

  • Step 9: Transfer to the baking dish of choice.

  • Step 10: Bake until center is set and edges just start to brown, about 30 minutes.

  • Step 11: Garnish with the remaining cheddar cheese and return to oven for 5 minutes for the cheese to melt.

  • Step 12: Allow to cool for 20 minutes before slicing.
